I started my first low-carb diet at 14, and for the next 12 years, I was stuck on the low-carb rollercoaster—losing weight, gaining it back, battling PCOS and other metabolic issues, and struggling with terrible energy and depression.

I vividly remember the frustration of doing everything I thought was “right,” only to feel worse. My energy would crash by midday, cravings ruled my evenings, and no matter how hard I tried, I felt like my body was working against me.

By my mid-20s, my relationship with food—and with carbs—was a mess. I thought carbs were the enemy, but cutting them out left me tired, moody, and out of sync with my body. The advice I got? “Just stick to low-carb, it’s the only way.”
